SHELF LIFE & ACIDITY
Best before 3 months in the fridge (but often good after)
3-7 days = Fresh, crisp, slightly sour and bubbly
7-14 days = Good bite with prominent acidity
14-1.5 mth = Less bite and insistent acidity
1.5-3 mth = Much less structured and higher acidity
(Use in food where you can balance
the acidity, e.g. soup)
HOW TO EAT IT
Eat it as a side dish or in, on or under any kind of food!
Rice dishes, grilled vegetables/meat, soup, on rye bread, in toast with lots of cheese..
Or simply as it is if you are a true kimchi lover!
