Traditional kimchi. Unpasteurized and slightly bubbly
the first weeks. That's why our kimchi is the tastiest way to vitamins and probiotics (lactic acid bacteria)

 

SHELF LIFE & ACIDITY
Best before 3 months in the fridge (but often good after)


3-7 days =     Fresh, crisp, slightly sour and bubbly

7-14 days =   Good bite with prominent acidity

14-1.5 mth = Less bite and insistent acidity

1.5-3 mth =   Much less structured and higher acidity

                      (Use in food where you can balance

                      the acidity, e.g. soup)

HOW TO EAT IT
Eat it as a side dish or in, on or under any kind of food!
Rice dishes, grilled vegetables/meat, soup, on rye bread, in toast with lots of cheese..
Or simply as it is if you are a true kimchi lover!

Originally it is used for Korean BBQ but according to Seoulmade's regulars, this stuff works on just about everything - open-faced sandwiches, any kind of eggs, as a dip for veggie sticks or fresh fruit.


Ssamjang is also a secret weapon for dressings, soups, mixed with mayo or anything else in your kitchen that needs that extra flavour kick!
